Valencian Yellowfin Tuna Rice
This family style rice dish is loaded with tuna and vegetables. It’s the perfect meal to satisfy everyone in the family.
Ingredients:
- 2 cups cooked rice
 - 1 can Van Camp’s Yellowfin Tuna, oil reserved
 - 1 Tablespoon minced garlic
 - 1/2 onion, chopped
 - 1 carrot, chopped
 - 1/2 bell pepper, chopped
 - 1/2 cup canned corn
 - 1/2 cup peas
 - 1/4 teaspoon paprika
 - 1/2 teaspoon salt, or to taste
 - Fresh cracked black pepper, to taste
 - 1/2 cup fresh chopped cilantro
 
Instructions:
- Heat large skillet to medium high heat. Pour the oil from the can of tuna in the skillet.
 - Add garlic and onions, cook until soft and fragrant.
 - Add carrots, bell pepper, corn and peas. Cook for about 5 minutes or until tender.
 - Add the cooked rice and stir until combined with the vegetables.
 - Season with paprika, salt and pepper.
 - Gently fold tuna into the rice mixture and cook until tuna is warm.
 - Garnish with cilantro.
